This cinnamon banana brad is the ultimate treat, combining the natural sweetness of ripe bananas with the warmth of aromatic cinnamon in every tender bite. - 1 3/4 cups all-purpose flour (210g)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3/4 cup granulated sugar (165g)
- 1/2 cup unsalted butter room temperature (113g)
- 2 large eggs
- 3 very ripe bananas mashed (Tip: if they aren't ripe, place them whole in the oven for 15 mins and they will soften up perfectly)
- 1 teaspoon vanilla
Step 1:
Preheat the oven to 180Β°C
Step 2:
In a medium bowl, sift the the flour, baking soda, salt, and cinnamon and finish off by whisking the dry ingredients together

In a large mixing bowl beat the sugar and butter together on high speed until light and fluffy, about 4 minutes.

Step 4:
Beat in the eggs and vanilla extract. Don't forget to scrape the sides.

Step 5:
Mash your bananas and mix them into your wet mixture.
Step 6:
Add the dry ingredients and fold together until just combined.
Step 7:
Pour the batter into the prepared loaf pan.

Step 8:
Sprinkle with cinnamon and sugar and place 2 halves of a banana on top. You can skip this step if you don't like chunky cooked banana in your bread.
Step 9:
Bake for 50-60mins or until a skewer comes out dry and clean
