- 200g white sugar
- Zest of 1 large lemon (or 1 tbsp)
- 6 egg yolks
- 100ml lemon juice
- 113g cold unsalted butter
Step 1:
Mix lemon zest with sugar to infuse vibrant citrus flavor
Step 2:
Whisk egg yolks with lemon zest sugar until smooth
Step 3:
Add lemon juice and whisk until fully incorporated
Step 4:
Place the mixture on the stove over low heat, stirring continuously until it thickens
Step 5:
Once it starts to thicken, remove from heat and stir in cold butter until melted
Step 6:
Continue whisking until the curd is smooth and thick
Step 7:
Transfer to a jar and refrigerate until ready to enjoy
